Mononatriumglutamaat (MSG) is een smaakversterker die wordt gebruikt om de hartige umami-smaak in voedsel te versterken. Het is het natriumzout van glutaminezuur, een aminozuur dat van nature ook in veel voedingsmiddelen voorkomt, zoals tomaten en kaas.

De smaak is niet zozeer “zout” of “zoet”, maar vooral umami: een diepe, hartige smaak die gerechten voller en rijker laat smaken. MSG heeft zelf weinig eigen geur of sterke smaak, maar versterkt bestaande smaken in een gerecht.

Het wordt gebruikt in soepen, sauzen, snacks, instant-noedels en bewerkte voedingsmiddelen. Het is populair in de voedingsindustrie omdat het de smaakintensiteit verhoogt zonder veel extra ingrediënten toe te voegen.
