Medlars

Medlars are small, brown fruits that come from the medlar tree. They have a hard, astringent texture when freshly picked, but only become edible and soft after a ripening process called “bletting.” The flesh then acquires a sweet, slightly spicy taste with a soft, jam-like texture. Medlars are often eaten raw when fully ripe, or made into jams, jellies and desserts. They are a traditional fruit in Europe and are valued for their unique ripening process and characteristic taste.
