Lof is often used raw in salads, but also boiled, stewed or gratinated with cheese and ham. It is popular in European cuisine, especially in winter, for its unique bitter taste that pairs well with creamy or sweet ingredients.

The vegetable is rich in fiber, vitamin K and folic acid, and contains few calories. Lof grows in the dark, which gives it its characteristic white color and mild bitterness. Fresh chicory is firm and crispy with tightly closed heads.
